Also, some people I've seen have been asking about the no redstone. Does this include command blocks for disappearing platforms (so long as these are triggered on a time)?

No disappearing blocks for now in these, this is something we want to bring in the future.
And yeah, commands blocks are not allowed.

Are we allowed to use custom head blocks, and can the diamond block be at a different height than the gold block?

You can use slime and honey blocks.
Looping is fine, but don't make a really long course.
